- 1 yellow onion, diced
- 1 can diced tomatoes, 14.5 oz
- 1 can kidney beans, drained and rinsed
- 8 oz elbow macaroni
- 1½ cups cheddar cheese, grated, divided
- ½ cup sour cream (optional)
- 2 green onions, thinly sliced (optional)

Heat the oil in a large pot over medium heat. Add the onion and cook, stirring, 5 minutes, until soft.
